Green proteins

Whatever we eat in the future, we will need them – proteins, the building blocks of all living things and a necessary part of food and feed.

 

Researchers at SLU are investigating the possibilities of making use of unused protein resources – those embedded in our cultivated crops that we now use to produce other things, such as sugar, oil and starch.

In the Plant Protein Factory at SLU, research is underway that examines the possibilities of better utilizing the resources in so-called green mass in the future, for example sugar beet leaves and beet pulp. The research project GreenLeaFood aims to characterize and evaluate the possibilities of using substances, including proteins, from green leaf biomass as high-value food components in the future.
